Η μαστίχα Χίου είναι μια φυσική ρητίνη (ρετσίνι) που βγαίνει από τον κορμό και τα κλαδιά του μαστιχόδεντρου (Pistacia lentiscus var. Chia). Γιατί όμως η μαστίχα παράγεται μόνο στη νότια Χίο; Η απάντηση βρίσκεται στο ιδιαίτερο μικροκλίμα της περιοχής, στο έδαφος, αλλά και στη μακρά παράδοση των κατοίκων.

  4. Το καθάρισμα των κρυστάλλων: Γυναίκες του χωριού καθαρίζουν προσεκτικά κάθε κρύσταλλο μαστίχας με μικρά μαχαιράκια.

Αυτή η παραδοσιακή μαστιχοκαλλιέργεια εγγράφηκε το 2014 στον Αντιπροσωπευτικό Κατάλογο της Άυλης Πολιτιστικής Κληρονομιάς της Ανθρωπότητας της UNESCO.

Introduction: What is Mastic? #

Chios mastic is a natural resin that flows from the trunk and branches of the mastic tree (Pistacia lentiscus var. Chia). Although the mastic shrub grows in many areas across the Mediterranean, it is only in southern Chios, in the so-called Mastic Villages (Mastichochoria), that this tree produces the famous aromatic resin.

When the resin droplets seep from the tree, they look like clear, translucent tears that solidify in the sun. For this reason, locals and poets often refer to mastic as “the tears of Chios.”

The Uniqueness of Southern Chios #

Why is mastic produced exclusively in southern Chios? The answer lies in the region’s unique microclimate, special soil composition, and the long-standing tradition of its inhabitants.

The 24 Mastic Villages in the southern part of the island feature a distinct medieval architecture. They were built as fortified castle-villages during the Middle Ages to protect both the villagers and their valuable product from pirates.

Traditional Cultivation: The “Embroidery” #

The process of harvesting mastic is a craft passed down through generations for centuries:

  1. Clearing the ground: In summer, farmers clean the ground beneath the tree and sweep it with white clay.
  2. The “Embroidery” (Kentima): Next, they make small incisions in the bark of the tree using a special pointed tool. This delicate process is called “kentima” (embroidery).
  3. Harvesting: The resin flows slowly, drips onto the ground, and dries into hard droplets. After a few weeks, farmers gather the “tears” by hand.
  4. Cleaning the crystals: Women of the village meticulously clean each crystal of mastic using small traditional knives.

In 2014, this traditional mastic cultivation was inscribed on UNESCO’s Representative List of the Intangible Cultural Heritage of Humanity.

Historical Uses and Modern Benefits #

Since antiquity, mastic has been renowned for its medicinal properties:

  • Antiquity: Hippocrates and Dioscorides recommended mastic for digestive health and oral hygiene.
  • Byzantine and Ottoman Eras: Mastic was so precious that its value was equivalent to gold.
  • Today: Modern scientific studies confirm that mastic possesses antibacterial, antioxidant, and anti-inflammatory properties.

Today, mastic is widely used in gastronomy and pastry (such as in tsoureki bread and kaimaki ice cream), spirits (mastic liqueur), cosmetics, and pharmaceuticals.
